Please Give Me Some Energy Bites

My garden is growing beautifully.  It’s amazing how gardening just works when you start with (1) raised beds (instead of planting right into the ground), (2) bagged organic soil and lobster compost (instead of tilling and fertilizing the dirt you’ve got), (3) soaking hoses on timers that automatically water (instead of having to remember the thirsty plants), and (4) heirloom seedlings the greenhouses have already established (instead of starting from seed).  The kale is nearly ready for picking. I think I screamed when I saw the first unmistakably peek of a broccoli floret.

And yet the same season that brings me these fantastic natural splendors is still knocking me out with itchy eyes and throat and other allergy unpleasantries.  I’ve wanted to cook in a general sense, but don’t actually want to cook anything.  Enter recipe for no-energy baked bites. No, I mean, No-Bake Energy Bites. Perfect for “cooking” on a day I had no energy.  I also had no coconut which was called-for in the recipe from Smashed Peas and Carrots, so we created our own awesome variations, using the same trusty formula as the original.

No-Bake Energy Bites

Cook Time: 0


Ingredients (18 bites)

  • 1 cup rolled oats
  • 1/2 cup peanut butter (or other nut butter)
  • 1 cup coconut flakes
  • 1/2 cup ground flaxseed
  • 1/2 cup mini chocolate chips
  • 1/3 cup honey
  • 1 tsp vanilla


Mix everything together in a large mixing bowl. Chill mixture in refrigerator for at least 30 minutes. Then, use wet hands to roll into balls and enjoy. Store in an airtight container in the refrigerator for 1 week (or freeze).

Our Batch #1: All of the above, but we substituted chopped raisins, apricots and crushed cereal for the coconut.

Our Batch #2: I started to prep a second batch that I planned to add coconut to later in the day. My fine sous chef, Noah, suggested we use a banana instead. We modified the recipe to something like this:

  • 1 cup rolled oats
  • 1/3 cup peanut butter
  • 1 mashed banana
  • 1/2 cup crushed cinammon shredded wheat (Kashi brand)
  • 1/2 cup raw shelled hemp
  • 1/4 cup mini chocolate chips
  • 1/4 cup semi-sweet chocolate chips
  • A squeeze of honey and a spoonful of maple syrup
  • 1 tsp vanilla

Each batch magically held its shape when we went to roll them into balls.  Better yet, they taste like cookie dough. I mean it.

They’ve been selling well over here.  I wrapped some in the parchment paper I used to set the rolled bites for a quick on-the-go snack. You could also press them into a pan and cut into squares.  Waaaaay better for your body than a handful of chocolate chips or a cookie on the way out the door. Feeling better already!
